Cornbread
Things Required
- vegetable shortening
- baking powder
- baking soda
- buttermilk
- stone-ground cornmeal
- large eggs
- salt and sugar to taste
Procedure
Firstly, take cornmeal, baking powder, baking soda, salt and sugar in a large bowl and whisk it hard. Then beat eggs in another bowl and add buttermilk to it. Mix it well and add it to the cornmeal mixture. Now, take the vegetable shortening and pour it in baking pan. Bake this in an already heated oven until fumes arise out of it. Quickly bring it put and add the cornmeal batter into it and again bake it for around 25 minutes until it is done.
Mashed Potatoes
Things Required
- medium sized potatoes
- butter
- warm milk
- salt and black pepper to taste
- chopped chives (optional)
- bacon bits (optional)
- If you opt to use both the options, then only add ¼ cup of each.
Procedure
You need to boil the peeled and cut potatoes in a large pot in water until tender and able to be pierced. Add milk and butter on these boiled and cooked potatoes after removing the water. Grind these into a mixer until smooth batter. Then add salt and pepper to taste.
